No Bake Chocolate Cheesecake

This oh so scrummy and delicious cheesecake was made in my new Delicake Rectangle Master. We have a full review of the master on the site and you can WIN one of your very own in our competition this week.

I converted this to a thermal cooker version from the original on the Delicake website where you can find a stack of really yummy and simple no bake dessert recipes.

Easily serving the chocolate cheesecake from the Delicake Master

Ingredients

  • 250g sweet plain biscuits
  • 75g butter
  • 100g caster sugar
  • 250g cream cheese (room temp)
  • 600ml thickened cream
  • 200g milk chocolate
  • 1 tbspn gelatine
  • ¼ cup hot water
  • 1 punnet of raspberries or strawberries

Method

  1. Grease and line a 23cm springform pan or spray oil lightly across your Delicake Master.
  2. Break biscuits in 2 pieces and put in jug.
  3. Blitz for 15 sec, speed 7.
  4. Add cubes of butter to jug and mix for 30 sec, speed 6.

  5. Spread base out and press down firmly til smooth and all the way to the edges of the pan.
  6. Place in fridge for at least 10 min.

  7. Rinse jug and wipe with paper towel.
  8. Break chocolate into pieces into the jug and blitz for 30 sec, speed 7. Repeat if necessary.
  9. Add cream to jug and cook for 3 min at 60⁰C, speed 3. Repeat if needed.
  10. Put chocolate mixture aside.
  11. Add cream cheese and caster sugar to jug and mix for 1 min, speed 4.
  12. Add 300ml cream and butterfly and mix for 1 min, speed 4.
  13. Sprinkle gelatine over hot water, mix until dissolved and cool but do not allow to set.
  14. Mix with the cream cheese mixture.
  15. Add cream cheese mixture to jug and mix for 10 sec, speed 3. Repeat if needed.
  16. Tip mixture onto base and refrigerate for a minimum of 8 hours.
  17. Top with berries and serve.

Tips

These quantities are for the round Delicake. If you are using the Rectangle Master like in these pictures you’ll need to double the quantities for the base and multiply the filling quantities by 1.5.
If your cream cheese is not at room temperature, beat it for 1 min, speed 3 in the jug before adding the sugar.
